Coconut Cream Buttermilk Panna Cotta

INGREDIENTS
400ml coconut cream
200ml plain cultured buttermilk
15g gelatin dissolved in 30ml warm water
2 kaffir lime leaves, bruised
50-75g raw white sugar
To top
 200g fresh strawberries, sliced
15g brown sugar
1 kaffir lime leaf, bruised
5ml lime juice
INSTRUCTIONS
  • Bring the coconut cream and kaffir lime leaves to a simmering boil over low medium heat {make sure it doesn't come to a rolling boil}.
  • Take off heat, and whisk in buttermilk and sugar. Leave to cool to room temperature, stirring now and then.
  • Strain and divide between 6 ramekins.
  • Leave to set overnight. Turn into serving plates and serve with a fresh strawberry topping.


Fresh strawberry topping
 Place all ingredients in a small heavy bottom pan. Simmer until the strawberries soften and the juice is nice and thick. Discard lime leaf, cool completely, then chill.
